Real mashed potatoes are so simple to make and honestly totally worth the time. And this recipe is for much healthier mashed potatoes. Only a tiny bit of butter, with 0% fat greek yogurt...I did add the goat cheese because we had it in the house and I wanted to get rid of it. The goat cheese adds a bit of tang, but you can omit it. Don't go run out and buy goat cheese if you don't want to. The recipe works just fiiiine without it.
3 lb red potatoes
5 garlic cloves
1 T unsalted butter
2 C 0% Greek yogurt
1 t salt
1/2 T pepper
1/8 C goat cheese
Cut the potatoes into quarters.
In a large pot, add the potatoes and fill with water to cover with 1" above the potatoes.
Bring to a boil and let boil and cover the pot. Let boil for at least 10 minutes or until soft. Drain the potatoes.
Mince the garlic cloves finely or use a garlic press to press the garlic. Add the potatoes back to the pot. Add the butter and the garlic first, combine then add the greek yogurt and the goat cheese.
Combine all of the ingredients well and mash with a potato masher, or a hand mixer, or an immersion blender. Or just anything that smashes it together!.
